The Shovel

The shovel is such an important tool in BBQ that is easily overlooked. Working the fire is what I spend the most amount of time doing. It has to be durable but not too heavy. I like it light and agile so it’s easy to move swiftly yet also be strong and sturdy. When I get a new shovel I bury it into the coals until the protective coating blisters off before I put any meat on the smoker. We begin each new experience vulnerable and unprotected together. It seems to grow in character with every cook. It acts as a crutch to rest on in the weary morning hours as well as a companion to confide my concerns about the progress of the cook to during the many hours of solace throughout the process. Im grateful for its contribution to every meal I make.
