Our food is cooked with live fire. The wood is regionally dependent, the process is tailored to the tradition we strive to emulate. Our inspiration comes from everything in nature. Our goal is to utilize the full capacity of our mind. Extracting synergy from balancing careful analytics with an abysmal proportion of creativity. Our goal is simple, to make the best barbecue possible. To eliminate the noise we are oftentimes so overwhelmed with and to tune into the aspects that truly matter. To focus on the quiet, the natural pause the world gives to us and that we often under appreciate in our modern world. We aim to deliver an experience in authenticity. We are searching for individuals willing to pilgrimage in order to satisfy their curiosity. To be a part of a process that takes hours and even days to complete. Deep down we know humans are craving to be a part of a real experience. In a society that expects instant gratification we are aware that there are those who appreciate an arduous process. People desire to be a part of something that is never complete but is perpetually being refined knowing full well that perfection may never be achieved. We keep the ingredients simple. The large proteins are seasoned only with salt and pepper. The magic is revealed through the careful manipulation of fire. To not push the process or force it to the finish, but to gently guide it and pay attention to every minute detail. From how perfectly we shape and trim the meat to how evenly individual grains of seasoning are applied. Fine details matter!  Barbecue can be extremely simple, but when meticulously executed it bursts into life with an awe inspiring emotional response. We are reuniting our spirits with the beauty our ancestors experienced. Food as it was meant to be consumed, cooked with the delicate nudge of live fire. We aspire to be peers with those who desire something more, those who have grown intoxicated by the contagious turmoil of barbecue. To analyze the cook, take criticism and then implement change in order to approve upon the next  attempt. To have the awareness that output is relative to input and that by your willingness to improve, willingness to do better, work harder and stay with the process you have the tools to become truly great. Creating great  barbecue is viscously addicting because it is revealed over time that this is about so much more than the meal you are creating.  Those that are good at this craft  can be great all around. To feel the pressure of judgment upon you as the product is tasted. To begin with the end in mind. To try to visualize 27 hours ahead into the future. To imagine your success and to do the work necessary to bring it into fruition is what makes great barbecuers special. To believe you are before you are. To stand alone at the pit  and wrestle with your transgressions, your insecurities and yet coerce your unbalanced mind back into a state of homeostasis. To realize that you have the capacity of your mind. As if your deep inner self is revealed amongst the licking flames and you realize that you have the ability to control the totality of your thoughts and ultimately your destiny. You have the ability to pick your direction and the height of success to which you aspire. To understand that there is no limit to our human potential.
